☆酒母の前の、水麹☆

いよいよお酒を仕込みます!

①まずは、水麹(みずこうじ)を造ります。
水麹とは米麹と水を混ぜたものです。

米麹は、蒸した酒米に麹菌をモリモリ繁殖させたもの。
麹菌の分解酵素によって米のデンプン→糖に分解させるために不可欠な物です!
米麹は、分解酵素をたっぷりと含んでいます。

この分解酵素が酒母全体に均一に作用するように、水に溶け出させたものが水麹なのです!

その日の気温によって、水麹の温度と、投入する蒸米の温度を計算・調整します。

②さて、酒米が蒸し上がりました!
そうしたら、外気温で目標温度まで冷まします。
気温が高いとなかなか蒸米が冷めず、大変。。。
アツアツの蒸米を素手で作業するので、、、かなり熱いです!!!

こうして冷ました蒸米を水麹・乳酸・酵母と混ぜ合わせると、「酒母(しゅぼ)」になります。

ここから酒母の温度を微妙に上げたり下げたりしながら、健全な酵母をたくさん育てていきます。

☆ Shubo and Mizukōji☆

Nakazawa shuzo was started make this season sake.

① First, make a Mizukōji(Starch degrading enzyme solution).
Mizukōji is a mixture of Kōji and water.

Kōji is raised the Kōjimold in steamed rice
Kōji contains a lot of starch degrading enzymes.

Kōji is indispensable for degrading rice starch into sugar by starch degrading enzymes.

MizuKōji is make for to be uniform Kōji’s starch degrading enzymes.

The temperature of the water and the steamed sake rice to be added are calculated and adjusted according to the temperature of the day.

② Next, sake rice is steamed!
The steamd sake rice cool down to the target temperature at the outside temperature.
If the temperature is high, the steamed sake rice will not cool down. . .
We working hot steamed rice with bare hands, so it’s pretty hot! ! !

And more mix the steamed sake rice, lactic acid, and yeast , it’s become a “shubo”.

From here, we will raise a lot of healthy yeast while raising and lowering the temperature of the Shubo.
